Potato Soup
For Something Warm and Comforting
Ingredients: 2 lbs golden potatoes, minced garlic (measure with heart), chicken broth, salt and pepper to taste, 1/2 cup butter, ground sausage (cooked), bacon bits, cheddar cheese, heavy whipping cream
Instructions: Dice potatoes into quarters, add to crockpot or stove pot. Add chicken broth, salt, pepper, and butter. Cook for four hours on high, or until potatoes are fork tender. Use a potato masher to mash the potatoes. Add cheddar cheese, stir. Add heavy cream, stir. Let warm through, about ten minutes. Add sausage, top with bacon bits. Serve with sour cream, extra cheese if desired. I highly recommend some kind of bread to scrape up the last of the soup from the bowl!
